Organic Cherry Fennel Pistachio Granola with Flax Seeds

A great bowl of granola is the perfect way to start your day full of healthy nutrients and flavors it does double duty as breakfast, snack or a great topping over ice cream. We're trying great recipes with flax seeds (ground not whole) full of fiber perfect for stabilizing blood sugar and can also help dissolve unhealthy fats from your digestive track. Full of magnesium zinc, B vitamins and fiber, add them to granola, smoothies or into your coffee. I had tasted these awesome cherry fennel pistachio biscotti at my local coffee shop and got the idea to turn it into a granola. I love this recipe by Oatgasm (she has the most gorgeous pictures) and just adjusted the ingredients to fit the type of granola i'm looking to try and used all organic ingredients. Use all organic ingredients as much as possible including the ones you add when you serve. Try it with honey, in yogurt or with a cool cup of milk. Hope you enjoy, let us know how you enjoyed it, we love hearing your feedback!

1. Gather Your Ingredients

Ingredients: Recipe adapted from Oatgasm

  • 3 cups oats
  • large pinch of sea salt and black pepper
  • 1 tsp. fresh chopped fennel seeds
  • 1/2 cup chopped pistachios (these should be raw)
  • 1 tbsp flax seeds
  • 1 tsp. cinnamon
  • 1 vanilla bean
  • 1 tbsp. olive oil
  • 2 tbsp. coconut oil
  • 1/2 cup honey
  • 1/3 cup dried cherries 
  • 1/3 cup coconut flakes

2. Mix Dry Ingredients then Wet Ingredients

Mix all your dry ingredients together, except your cherries and coconut.

In a separate bowl mix all your wet ingredients, including the scraped vanilla from your vanilla bean.

3. Blend All the Ingredients Together

Pour your wet ingredients over your dry ingredients and mix until all the oats are covered, which may require some vigorous stirring.

Set your oven to 350 degrees and in a large baking sheet place parchment paper on the sheet and spread the mixture over the baking sheet. It should be flat and evenly spread out. 

Bake for 10 minutes,  remove the mixture and stir it carefully and return it to the oven for another 10-15 minutes until oats are crisp and golden.

4. Add Toppings & Serve with Fresh Fruit

Remove granola from the oven and while it cools chop figs to mix into the mixture once it cools. 

You can then add the coconut and cherries into the now cooled mixture, do not toast coconut flakes into the mixture you place in the oven, it will leave a bitter and unpleasant taste. 

Top it with your favorite fruit, honey, milk or yogurt and enjoy!

Organic Rosemary Chia Seed Coconut Fig Granola

If your anything like us, there's nothing better than a great bowl of granola when your on the go and want a quick, hearty and delicious breakfast! I'm currently obsessed with chia seeds and their nutritious health benefits and low calorie count. Full of magnesium, protein and fiber, they are perfect to add into granola, smoothies or on top of your yogurt. I had been looking for a great recipe to use rosemary in since I love the smell and think it looks so gorgeous in food and discovered a great one by Oatgasm (she has the most gorgeous pictures) and adapted it to the things I like to include in my food and also used all organic ingredients. Use all organic ingredients as much as possible including the ones you add when you serve. Try it with honey, in yogurt or with a cool cup of milk. Hope you enjoy, we loved making it and love eating it even more!

  • 1/3 cup dried figs (about 6-8 whole figs)
  • 1/3 cup coconut flakes

Organic Coconut Water Chia Seed Green Juice

Green juices are not going anywhere, so we decided to try a new recipe using our favorite coconut water Cocolibre. It's the first and only organic coconut water so of course we had to find a few different ways to use it in our daily routine. Packed with more magnesium than a banana, coconut water is the perfect after workout hydrator to restore electrolytes, after you've been in the sun or just to enjoy with a few berries or watermelon tossed in to enjoy throughout the day. We enjoy this green juice recipe after a workout or as a part of our breakfast. Don't be afraid to try your own version with other berries or fruit you may enjoy. 

1. Coconut Water

I've always wanted to be able to enjoy coconut water but after trying some of the more natural brands, hadn't found one that I enjoyed the flavor until I discovered Cocolibre.

It's not only organic but has such an amazing taste, I'm so happy to be able to share it with you guys!

It's a must try you can find in your natural section of your grocery store or any Whole Foods.

2. Gather Your Ingredients

We used only organic ingredients for this juice and in most of our foods. Find them at Whole Foods or your local farmers market.

Ingredients:

  • 1 cup spinach
  • 1/4 avocado
  • 1/4 apple
  • 1/4 pear
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • 1/4 cup blackberries
  • 1/2 cup coconut water
  • 1 banana

3. Add your Ingredients to the Blender

Add in all your fruit, spinach, chia seeds and honey.

Add a dash of cinnamon or ginger for extra metabolic boosters. See our post on these here.

4. Add in Coconut Water

Once all your ingredients are in the blender, add in your coconut water and then turn your blender on a high setting to break down the apple, pear and seeds in your berries for a smoother taste.

5. Blend all Your Ingredients 

Be sure to blend all the ingredients together until the juice turns completely green.

Adjust any of the portions to suit your taste.  

If you've blended it and its taken on the color of your berries you may need to blend further or add in a handful spinach.

6. Pour & Serve

Makes 2 cups or 1 large size tumbler. 

Pour your green juice into your favorite tumbler or portable mug top with a few berries or granola and enjoy!
